The terroir of the Herrero family vineyards is just outside Segovia at 850m above sea level. Interestingly, the sandy soils escaped the majority of the phylloxera blight that ripped through Europe in the 19th century.

The grapes are harvested at dawn, gently de-stemmed and pressed within an hour of picking.
