The Bagella's farm organically on roughly 5 hectares in Sorso. Their vines are on average 80-90 years old. This wine is fermented without the use of commercial yeasts in stainless steel tanks with a maceration period of about 14 days. The shorter maceration period contributes to the more restrained style, not typical of Cannonau. The wine ages in stainless steel tanks for 8–12 months before being bottled without fining or filtration.
